These Buffalo ranch chicken meatballs are juicy, flavorful, and deliciously seasoned with our Ranch Dip Mix for a twist on a game-day favorite. Tossed in Buffalo sauce and paired with a cool, creamy ranch drizzle, they’re the ultimate crowd-pleasing appetizer. They're also great served over rice with broccoli for an easy weeknight meal!

Ingredients
- For the Meatballs:
- 1 pound ground chicken
- 1/2 cup panko breadcrumbs
- 1 egg
- 1/4 cup green onions, finely chopped, plus more for garnish (optional)
- 1/3 cup celery, finely chopped
- 1 tablespoon Simply Organic® Ranch Dip Mix
- 1 tablespoon + 1/3 cup Buffalo wing sauce, divided
- 1/2 teaspoon sea or Himalayan pink salt
- 1/4 teaspoon Simply Organic® Black Pepper
- For the Sauce:
- Remaining Simply Organic® Ranch Dip Mix from packet
- 1 cup sour cream or plain Greek yogurt
- 2-3 tablespoons milk
Directions
- Preheat oven to 400 degrees and line a baking sheet with parchment paper.
- Into a large bowl, add chicken, breadcrumbs, egg, green onions, celery, ranch mix, 1 tablespoon Buffalo wing sauce, salt and pepper, and mix until well combined.
- Using a 2-tablespoon cookie scoop, portion out meatballs, roll with your hands, and place on baking sheet. Bake for about 25 minutes, until bottoms are golden brown and meatballs are cooked through.
- While meatballs are baking, whisk together remaining ranch seasoning with sour cream and milk, adding enough milk for a pourable consistency.
- When meatballs are done, transfer them to a bowl and toss with remaining 1/3 cup buffalo sauce.
- Drizzle ranch sauce over meatballs just before serving. Garnish with thinly sliced green onions, if desired.
