Spicy White Beans with Spinach

Call it recession-core cooking or call it Tuscan-inspired dining -- either way, these simple beans and greens are quick to whip up and full of Italian flavor. We like this recipe for a quick vegetarian lunch, or a light side dish with fish or chicken.

Ingredients

  • 1 Tbsp basil infused olive oil

    1/2 tsp crushed red pepper flakes

    5 oz fresh baby spinach

    1/2 tsp salt

    1 cup whole peeled tomatoes, crushed

    1 tsp garlic powder

    1/2 tsp Italian seasoning

    2, 15-oz cans canellini beans, drained and rinsed

    Shredded Parmesan, for serving

Directions

    1. In a large skillet over medium heat, heat olive oil. Add crushed red pepper flakes and sautee for 30 seconds. 

    2. Add spinach and salt and cook, stirring frequently, until spinach is completely wilted.

    3. Add tomatoes, garlic powder, and Italian seasoning. Stir and bring to a low simmer.

    4. Add beans and simmer for 2-3 minutes, until beans are heated through. 

    5. Serve topped with Parmesan.
