  1. On a small shallow plate, sprinkle 1 tablespoon Chai Finishing Sugar in a circle. Dip rim of martini glass in honey or simple syrup, then dip in chai finishing sugar. Chill glass in freezer while making the martini.
  2. Brew espresso. While it’s still hot, add 1 teaspoon finishing sugar and stir until sugar dissolves. Let espresso cool for 5 to 10 minutes.
  3. Into a cocktail shaker filled halfway with ice, add the espresso, vodka and coffee liqueur. Shake until cocktail is well chilled, then strain into chilled martini glass. Garnish with a few coffee beans and serve immediately.
