  1. Preheat oven to 400 degrees and lightly grease a nonstick sheet pan with cooking spray, or coat with more olive oil.
  2. In a large bowl, whisk together olive oil, salt, garlic powder, basil, parsley, rosemary and pepper. Add potatoes and toss until well coated.
  3. Onto coated sheet pan, sprinkle Parmesan cheese in an even, thin layer, leaving a 1- to 2-inch border around all edges.
  4. Roast for about 25 minutes, until potatoes are fork-tender and Parmesan is crispy. Let them cool on baking sheet for 5 minutes so Parmesan can set, then use a spatula to gently remove them. Serve warm.
