Ingredients
- 3 tablespoons olive oil
- 1/2 teaspoon sea or Himalayan pink salt
- 1 teaspoon Simply Organic® Garlic Powder
- 1/2 teaspoon Simply Organic® Basil
- 1/2 teaspoon Simply Organic® Parsley
- 1/2 teaspoon Simply Organic® Rosemary
- Simply Organic® Black Pepper, to taste
- 24 ounces baby yellow potatoes, sliced in half
- 1 cup finely shredded Parmesan cheese
Directions
- Preheat oven to 400 degrees and lightly grease a nonstick sheet pan with cooking spray, or coat with more olive oil.
- In a large bowl, whisk together olive oil, salt, garlic powder, basil, parsley, rosemary and pepper. Add potatoes and toss until well coated.
- Onto coated sheet pan, sprinkle Parmesan cheese in an even, thin layer, leaving a 1- to 2-inch border around all edges.
- Roast for about 25 minutes, until potatoes are fork-tender and Parmesan is crispy. Let them cool on baking sheet for 5 minutes so Parmesan can set, then use a spatula to gently remove them. Serve warm.
