Dyeing easter eggs naturally is a delightful endeavor that yields unique and beautiful results. This recipe gives you two ways to dye eggs with herbs and spices: A hot method starting with raw eggs, which delivers the deepest colors; and a cold method for coloring already-hard-boiled eggs. We use 4 to 6 eggs in this recipe just to get you started.

HOT BATH DIRECTIONS
  1. In an enamel or glass (not aluminum) pot, bring water, herbs or spices, and mordant to a boil.
  2. Add eggs and reduce heat to a simmer.
  3. Cook for about 15 minutes, remove from heat, cover and let sit another 15 minutes or more, until desired color is achieved.
  4. Remove eggs, gently rinse in lukewarm water, and let air dry.
COLD BATH DIRECTIONS
  1. In an enamel or glass (not aluminum) pot, make a dye bath by bringing water, herbs or spices, and mordant to a boil.
  2. Simmer, covered, until water is deeply colored, anywhere from 1/2 to 2 hours.
  3. Strain liquid and let cool. Add hard-boiled eggs to dye, and let soak until desired color is reached. You can even soak overnight in the refrigerator, if you like.
 
NOTE
  1. Have fun experimenting with various herbs and spices to see what colors they impart! Here are some suggestions to get you started: • Reddish blue/lavender: Hibiscus flowers • Pink/magenta: Dragon fruit powder • Deep gold: Turmeric root powder • Green: Matcha green tea powder • Pale yellow: Safflower petals • Pale orange: Curry powder • Reddish brown: Chili powder • Orange: Paprika • Soft brown: Dill seed • Tannish yellow: Yarrow
