

Mediterranean-Style Cucumber Salad

Refreshing, crunchy and flavorful, this easy Mediterranean salad is packed with tomatoes, cucumber, radishes, feta cheese, and a simple lemon and olive oil dressing seasoned with Simply Organic® Garlic Powder, Black Pepper and Oregano. This is a fantastic side dish for a grilled protein, or add a can of drained and rinsed chickpeas for a light lunch.

Ingredients
- 2 cups cherry tomatoes, quartered
- 2 cups diced mini cucumbers
- 1 cup diced radishes
- 4 ounces feta cheese, cubed or crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon sea or Himalayan pink salt
- 1/2 teaspoon Simply Organic® Garlic Powder
- 1/4 teaspoon Simply Organic® Black Pepper
- 1 teaspoon Simply Organic® Oregano
Directions
- In a large mixing bowl, add tomatoes, cucumber, radishes, and feta. Drizzle with olive oil and lemon juice, then sprinkle with salt, garlic powder, black pepper, and oregano.
- Toss well until everything is evenly coated. Serve right away. Keep leftovers stored in an airtight container in the refrigerator for up to 3 days.
