Palmiers are simple, layered French pastries with a shape similar to a heart, and are sometimes made with only puff pastry, butter, and sugar. Our version incorporates warm, rich flavor from our Regenerative Organic Certified® Ceylon Cinnamon and Madagascar Vanilla Extract, for a sweet, flaky treat you’ll keep coming back for.

Ingredients
- 2 tablespoons butter, melted
- 1 tablespoon Frontier Co-op® Regenerative Organic Certified® Madagascar Vanilla Extract
- 1/2 cup Frontier Co-op® Organic, Fairtrade Cane Sugar
- 1 teaspoon Frontier Co-op® Regenerative Organic Certified® Ceylon Cinnamon
- 14 ounces puff pastry, thawed, but very cold
Directions
- In a small bowl, combine melted butter with vanilla extract, and set aside.
- In another small bowl, combine granulated sugar and cinnamon, and set aside.
- Place puff pastry on a clean surface and lightly roll out with a rolling pin. (This also helps the sugar stick to the puff pastry).
- Brush with about half of the vanilla butter and sprinkle with just enough cinnamon sugar to fully coat puff pastry in an even layer. Press mixture in gently with your hands.
- Fold pastry in half to mark the middle point of the length of the rectangle, then re-open. Fold each end about one-quarter of the way to the middle. Brush exposed pastry folds with some vanilla butter and sprinkle with cinnamon sugar.
- Make another fold, folding each end over again toward the middle. Brush with more vanilla butter and sprinkle with cinnamon sugar. Then fold once more so one side is on top of the other and press down gently with a rolling pin. Coat outsides with remaining butter and sugar mixtures. Place in freezer for 30 minutes.
- Preheat oven to 400 degrees and line a sheet pan with parchment paper.
- Remove pastry from freezer and cut into 1/2-inch wide slices. Place on parchment paper about 2 inches apart and bake for 8 to 10 minutes, then flip with a spatula and cook for another 4 to 5 minutes, until golden brown and crispy.
- Let cool completely, and enjoy!
