An easy, homemade vanilla blueberry syrup is the perfect fruity pairing for a light and refreshing spring/summer iced latte! It’s a delicious twist on your classic morning brew, great for a warm morning or an afternoon pick-me-up.
NOTE: The syrup will make enough for about 4 lattes.

Ingredients
- For the Vanilla Blueberry Syrup:
- 1 cup fresh or frozen blueberries
- 1/2 cup water
- 1/2 cup cane sugar
- 1 teaspoon Simply Organic® Pure Madagascar Vanilla Extract
- For Each Latte:
- 1 1/2 ounces vanilla blueberry syrup
- 4 ounces milk of choice
- 2 ounces freshly brewed espresso, cooled
Directions
- In a small saucepan over medium heat, add blueberries, water, sugar and vanilla. Bring to a simmer, then reduce heat to low and cook for 7 to 9 minutes, stirring often, until blueberries have all burst and liquid is reduced slightly.
- Strain mixture through a fine mesh sieve, pushing through as much blueberry juice as possible. Discard solids. Let syrup cool.
- Into a tall glass, add ice to desired level.
- Pour in blueberry syrup, milk and cooled espresso, and stir to combine. Enjoy!
