

Chili Lime Popcorn

Add some zip to snack time with this easy popcorn recipe featuring a simple mixture of chili powder and lime juice. Might we suggest this whole grain, yet sugar-free snack idea for when you wish it were 5 o’clock somewhere?
This recipe uses a chili powder seasoning blend that includes chili, cumin and other spices. Make it your own and turn up the heat with your choice of chili powder: try substituting ancho chili powder or ground chipotle, starting with 1/2 teaspoon in the lime juice mixture and increasing to taste.

- Large pot with lid
- Large mixing bowl
- Small mixing bowl
- Silicon spatula

- 2 Tbsp coconut oil or vegetable oil
- 1/2 cup popcorn kernels
- 2 Tbsp lime juice
- 1 Tbsp Simply Organic Chili Powder Seasoning Blend
- 1/4 tsp Frontier Co-op Coarse Sea Salt
Directions
- Using a large pot, heat 2 tablespoons coconut or vegetable oil over medium-high heat for 3-5 minutes. I recommend a pasta pot with glass lid, so you can see what’s popping.
- To test the oil’s temperature, add 3 popcorn kernels. Once they pop, add the remaining 1/2 cup.
- Cover the pot with lid and cook.
- With a secure grip on the lid, shake the pot every 20 seconds or so to avoid burning the kernels.
- When you don’t hear a pop for about 30 seconds, remove pot from heat and pour popcorn into large mixing bowl.
- In small mixing bowl, whisk the chili powder and lime juice together.
- Drizzle the mixture over popcorn in a large mixing bowl and stir or toss until the popcorn is thoroughly coated.
- Sprinkle with coarse sea salt.
- Let stand 3 minutes, and then serve and enjoy.
