Oven Baked Pizza Seasoned Chicken Tenders

Made with chicken tenders and crusted with Bob’s Red Mill gluten free almond and tapioca flour makes this meal paleo-friendly. Frontier Co-op’s pizza seasoning takes regular ol’chicken fingers from bland to GRAND! The whole family will love dipping these in Organico Bello no sugar added pizza sauce. If you aren’t paleo, by all means, toss a half cup or more grated parmesan cheese into the almond flour mix. (Thank you to our friend Stacey Swanson for creating this wonderful recipe.)

  1. 425 degree oven
  2. Line a large cookie sheet with parchment paper
  3. You will need 2 shallow containers, one for eggs and one for flours. I like to use pie plates.
  4. In one pie plate, combine the almond flour, tapioca flour, pizza seasoning & salt.
  5. In the other pie plate beat 3 eggs.
  6. Working quickly, use one hand to dip one tender in the egg mixture and then place in the pie plate with flours. Use the dry hand or a spoon to coat the chicken on both sides pressing the mixture into the chicken. Place on the cookie sheet. Repeat until all chicken tenders are coated.
  7. Drizzle a little avocado oil over the tenders or using avocado spray, spray them lightly. Flip them over and do the same, either drizzle or spray. They don’t have to be completely covered in oil
  8. Bake anywhere from 18-35 minutes (rotating pan and flipping tenders 1/2 way) or until starting to brown & crisp. Depending on how thick your tenders are will depend on how long you cook them for.
  9. You can sprinkle extra salt on the warm tenders before serving and they are awesome when sprinkled with a little bit of lemon zest out of the oven. Sounds weird but it just works.
  10. Serve with warmed pizza sauce for dunking & dipping.
