

Stuffed Cremini Mushrooms

Ingredients
- 2 lbs cremini mushrooms
- 1/2 cup onions, minced
- 1/2 cup olive oil
- 2 cups unseasoned breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cups Cucina Antica La Vodka sauce
Directions
- Preheat oven to 400 degrees. Line baking pan with foil.
- Remove stems from mushroom caps. Keep 1 ½ lbs of the mushroom caps intact to stuff. Mince remaining mushroom caps and stems.
- In a large sauté pan, heat olive oil over medium heat. Add minced mushrooms and onions, cook until wilted (about 3-5 minutes).
- In a large bowl, combine 1 cup of breadcrumbs, and Parmesan cheese. Once mushrooms and onions have cooled, add to mixture, and thoroughly combine.
- On the baking pan, arrange mushroom caps in a single layer. Stuff mixture into mushroom caps. Drizzle with olive oil and remaining breadcrumbs. Bake for 20 minutes.
- Remove from oven and drizzle mushroom caps with La Vodka sauce. Bake for an additional 10 minutes.
