Stuffed Cremini Mushrooms

  1. Preheat oven to 400 degrees. Line baking pan with foil.
  2. Remove stems from mushroom caps. Keep 1 ½ lbs of the mushroom caps intact to stuff. Mince remaining mushroom caps and stems.
  3. In a large sauté pan, heat olive oil over medium heat. Add minced mushrooms and onions, cook until wilted (about 3-5 minutes).
  4. In a large bowl, combine 1 cup of breadcrumbs, and Parmesan cheese. Once mushrooms and onions have cooled, add to mixture, and thoroughly combine.
  5. On the baking pan, arrange mushroom caps in a single layer. Stuff mixture into mushroom caps. Drizzle with olive oil and remaining breadcrumbs. Bake for 20 minutes.
  6. Remove from oven and drizzle mushroom caps with La Vodka sauce. Bake for an additional 10 minutes.
