Taco Stuffed Avocados

These stuffed avocados are filling but they won’t weigh you down. Grass-fed ground bison and Frontier taco seasoning make the stuffing, but you can swap any ground filling you like. Walnut taco meat would be a great vegan option. Pair this with a side of sliced oranges, cucumbers or jicama and watermelon sprinkled with Simply Organic chili lime seasoning and you have a quick and healthy meal for lunch or dinner that does not skimp on flavor.   1. This recipe makes a softer taco meat by allowing the ground meat to simmer in the tomato paste, beef stock and Mexican seasoning for a short time and then taking the lid off and allowing some of the liquid to evaporate.
  2. Combine the uncooked ground meat, 1 cup of broth, tomato paste and, Mexican seasoning to taste in a skillet or small dutch oven that has a lid. Bring the meat up to a simmer and cover it. Cook about 30 minutes or so (checking and stirring often so it doesn’t burn). When you are ready, just remove the lid and turn up the heat until the liquid starts to evaporate but not so much you have dried out your filling. *You are also welcome to cook your taco meat in your own traditional way, I just prefer a softer ground meat like is served in the taco shops.
  3. Simply stuff the avocados with the bison taco meat and add any taco garnishes you like on top. Sprinkle your finished avocado with hemp seeds/hearts.
  4. Slice your oranges into rounds, cut up your cucumbers, jicama or watermelon and sprinkle with Simply Organic chili lime seasoning for your side.
