Herbes de Provence Roasted Chicken

This chicken recipe sets the standard for effortlessly beautiful. With almost no prep time required, it's simple enough for a weeknight dinner yet fancy enough for a dinner party. Adding the drizzle of olive oil the last ten minutes of roasting adds an extra kiss of finger-licking crispness. We like this with a Spring Greens Salad.   1. Preheat oven to 375 degrees Fahrenheit.
  2. Place chicken in a baking dish. Sprinkle with sea salt, then with Herbes de Provence and White Peppercorn.
  3. Roast in preheated oven for 25 minutes. At 25 minutes, remove chicken and drizzle with olive oil. Return to oven for an additional 10 minutes, or until chicken reaches internal temperature of 165 degrees Fahrenheit.
  4. Let chicken rest 5 minutes before serving.
