

Roasted Strawberry Parfait

Most “fruit-on-the-bottom” Greek yogurt contains more added sugar than you’d expect. Instead, try this easy yogurt parfait recipe that’s delicious enough for dessert, yet healthy enough for breakfast. Make the roasted strawberries ahead, and add leftovers to oatmeal, pancakes or our Healthier Strawberry Milkshake. (Thank you to our friend Katie Shatzer for creating this wonderful recipe.)

Ingredients
- For the roasted strawberries:
- 1 pound fresh strawberries, cleaned, hulled and sliced
- 1 teaspoon coconut sugar
- ½ teaspoon ground ginger
- 1/8 teaspoon salt
- For the parfait:
- 1 cup plain Greek yogurt
- 1 teaspoon Simply Organic Vanilla Bean Paste
- ½ cup Grandy Organics Classic Granola
- 2 ounces Karmelize.me Raw Almonds, roughly chopped
Directions
- Preheat oven to 325 degrees.
- In a shallow baking dish, sprinkle sugar, ginger and salt over the strawberries. Toss to coat.
- Roast in preheated oven for 45-50 minutes, stirring after 20 minutes. Strawberries will be soft and juices will have released into the dish.
- Remove from oven, stir and transfer to a dish to cool. Refrigerate for at least one hour and up to one week.
- Drizzle vanilla bean paste into Greek yogurt and stir well. Set aside.
- In a wide-mouth glass, spoon ¼ cup of the Greek yogurt mixture into the bottom and smooth out until level.
- On top of the yogurt, layer 2 tablespoons chilled, roasted strawberries.
- On top of the strawberries, add 2 tablespoons granola.
- Repeat another layer of yogurt, strawberries and granola. Top with almonds.
- Repeat for the second parfait.
- Make ahead: Parfaits are best assembled within 30 minutes of serving to keep the granola crunchy. To make the night before, layer the yogurt and strawberries and add all granola and almonds to the top. Store in refrigerator in a sealed container.
