With melty cheese and slow-cooked onions, this Slow Cooker French Onion Chicken is a high-protein, low-carb version of the classic French soup. The chicken is seasoned with Simply Organic® French Onion Dip Mix, cooked low and slow until tender, and finished with a quick broil for a bubbly browned gruyere top. Simply delicious, requiring minimal hands-on time.

  1. In the bottom of a slow cooker, arrange onions in an even layer and pour beef broth over onions.
  2. Sprinkle half of the French Onion Dip Mix, thyme and salt over onions. Place chicken breasts on top, then season with remaining Dip Mix, thyme and salt.
  3. Set slow cooker to high and cook for 3 to 4 hours, or set it to low and cook for 4 to 6 hours.
  4. When chicken is cooked through, preheat oven to high broil. Transfer chicken to a baking dish. Top with the cooked onions, then pour broth over all. Sprinkle cheese on top. Broil for about 5 minutes until cheese is bubbly and golden.
  5. Sprinkle with parsley and serve with mashed potatoes or pasta.
