

Slow Cooker French Onion Chicken

With melty cheese and slow-cooked onions, this Slow Cooker French Onion Chicken is a high-protein, low-carb version of the classic French soup. The chicken is seasoned with Simply Organic® French Onion Dip Mix, cooked low and slow until tender, and finished with a quick broil for a bubbly browned gruyere top. Simply delicious, requiring minimal hands-on time.

Ingredients
- 1 large yellow onion, thinly sliced
- 3/4 cup beef broth
- 2½ pounds boneless skinless chicken breasts (4 to 6, depending on the size)
- 1 packet Simply Organic® French Onion Dip Mix, divided
- 1 teaspoon Simply Organic® Thyme, divided
- 1½ teaspoons kosher salt, divided
- 8 ounces Swiss or gruyere cheese
- 2 tablespoons fresh parsley, finely chopped, for garnish
Directions
- In the bottom of a slow cooker, arrange onions in an even layer and pour beef broth over onions.
- Sprinkle half of the French Onion Dip Mix, thyme and salt over onions. Place chicken breasts on top, then season with remaining Dip Mix, thyme and salt.
- Set slow cooker to high and cook for 3 to 4 hours, or set it to low and cook for 4 to 6 hours.
- When chicken is cooked through, preheat oven to high broil. Transfer chicken to a baking dish. Top with the cooked onions, then pour broth over all. Sprinkle cheese on top. Broil for about 5 minutes until cheese is bubbly and golden.
- Sprinkle with parsley and serve with mashed potatoes or pasta.
