No campfire needed for these gooey, chocolatey-delicious s’mores cookie bars! These are basically a soft chocolate chip cookie in bar form, with plenty of mini marshmallows and graham crackers for the ultimate summer make-ahead treat.

Ingredients
- 1/2 cup unsalted butter, softened to room temperature
- 1/2 cup light brown sugar
- 1/4 cup cane sugar
- 1 large egg
- 1 teaspoon Simply Organic® Pure Madagascar Vanilla Extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon Simply Organic® Ceylon Cinnamon
- 1/4 teaspoon sea or Himalayan pink salt
- 3/4 cup mini marshmallows, frozen (plus more for topping, optional)
- 3/4 cup semi-sweet chocolate chips (plus more for topping, optional)
- 3/4 cup coarsely crushed graham cracker pieces (plus more for topping, optional)
Directions
- Preheat oven to 350 degrees and line an 8-x-8-inch baking pan with parchment paper.
- In a large bowl, cream together butter, brown sugar and cane sugar for about 2 minutes, until light and fluffy. Beat in egg and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking soda, cinnamon and salt. Gradually mix dry ingredients into wet ingredients, stirring until just combined.
- Fold in chocolate chips, marshmallows and graham cracker pieces.
- Press dough evenly into prepared pan, then, if using, sprinkle extra toppings over surface and gently press them in.
- Bake for 20 to 25 minutes, or until edges are golden and center is just set. Cool completely before slicing into bars.
