No campfire needed for these gooey, chocolatey-delicious s’mores cookie bars! These are basically a soft chocolate chip cookie in bar form, with plenty of mini marshmallows and graham crackers for the ultimate summer make-ahead treat.

Ingredients

  • 1/2 cup unsalted butter, softened to room temperature
  • 1/2 cup light brown sugar
  • 1/4 cup cane sugar
  • 1 large egg
  • 1 teaspoon Simply Organic® Pure Madagascar Vanilla Extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon Simply Organic® Ceylon Cinnamon
  • 1/4 teaspoon sea or Himalayan pink salt
  • 3/4 cup mini marshmallows, frozen (plus more for topping, optional)
  • 3/4 cup semi-sweet chocolate chips (plus more for topping, optional)
  • 3/4 cup coarsely crushed graham cracker pieces (plus more for topping, optional)

Directions

  1. Preheat oven to 350 degrees and line an 8-x-8-inch baking pan with parchment paper.
  2. In a large bowl, cream together butter, brown sugar and cane sugar for about 2 minutes, until light and fluffy. Beat in egg and vanilla extract until smooth.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon and salt. Gradually mix dry ingredients into wet ingredients, stirring until just combined.
  4. Fold in chocolate chips, marshmallows and graham cracker pieces.
  5. Press dough evenly into prepared pan, then, if using, sprinkle extra toppings over surface and gently press them in.
  6. Bake for 20 to 25 minutes, or until edges are golden and center is just set. Cool completely before slicing into bars.
