It’s so easy to make — just 10 minutes and no ice cream machine needed — and power-packed cottage cheese replaces the heavy cream. With a banana supplying extra richness, this cheesecake-inspired version is decadent, fruity, sweet and delicious.

Ingredients
- 2 cups full-fat cottage cheese
- 1 banana
- 8-10 ounces fresh strawberries, diced (to yield 1 ½ cups), divided
- 1/4 cup honey, agave or maple syrup
- 1 1/2 teaspoons Simply Organic® Pure Madagascar Vanilla Extract
- 1/2 cup crushed graham crackers
Directions
- In a blender, add cottage cheese, banana, ¾ cup strawberries, honey and vanilla extract and blend until smooth.
- Pour into a freezer-safe container and stir in remaining diced strawberries and graham cracker pieces.
- Freeze for about 4 hours, until frozen solid. Let it thaw for 5 to 10 minutes at room temperature before scooping and serving.
