Gluten Free Oat Pear Raspberry Crumble

Gluten free does not mean flavor free. Bob’s Red Mill has so many awesome gluten free flours to choose from. I have swapped out the traditional apple for pears in this crumble recipe. Fresh raspberries dot the pear filling and poke out of the oat crumble like lil’ red gems. Oat flour replaces traditional all purpose flour in the base of the crumble. Feel free to play around with this rustic dessert by swapping out the fruit, adding in some different nuts. Serve it warm out of the oven with a scoop of ice cream or even drizzle with your favorite plant based milk. (Thank you to our friend Stacey Swanson for creating this wonderful recipe.)
Ingredients

Fruit Filling
5-6 cups of pears diced into bite sized pieces (I used a combo of red/green and I left the skins on)
1 pint of fresh raspberries
1.5-2 teaspoons of Frontier Co-op apple pie spice
2 tablespoons or to taste of Frontier Co-op maple powdered sugar
1 teaspoon of Frontier Co-op vanilla extract
1 teaspoon of Frontier Co-op almond Extract
1/4 teaspoon of Frontier Co-op salt
*Optional
1-2 teaspoons of Sutter Buttes dark raspberry balsamic vinegar
Simply Organic Spice Right cinnamon sugar trio
Crumble Topping
1 cup of Bob’s Red Mill gluten free oat flour
1/2 cup of Bob’s Red Mill gluten free rolled oats or old fashioned oats
1/4 cup of Wholesome organic granulated sugar
1/4 cup of Wholesome organic light brown sugar
1/2 cup of slivered almonds
1/4 teaspoon of Frontier Co-op salt
8 tablespoons of melted & cooled unsalted butter
Directions
Preheat an oven to 350 degrees. Grease an oven proof skillet or baking dish.
1. In a bowl combine all of the crumble topping ingredients and set aside.
2. In another bowl toss your diced pears, apple pie spice, maple sugar to sweetness, vanilla extract, almond extract, salt and optional raspberry vinegar.
3. Pour pear mixture into a greased oven proof skillet or baking dish. Dot the raspberries all over and gently poke down into pear mixture.
4. Break up the crumble topping and place it over top of the fruit.
5. Sprinkle some of the Simply Organic Spice Right cinnamon sugar trio all over the top of the crumble.
6. Pop in a 350 degree oven and bake around 35-45 minutes.
7. Serve warm with a scoop of ice cream or drizzle with some cream or favorite plant based milk.
