Puerto Rican Fried Sweet Plantains

Ripe plantains pan fried in cinnamon and maple sugar until caramelized are a delicious snack on their own or spoon them over ice cream, yogurt or oatmeal. I created a simple sundae of vanilla ice cream, a drizzle of cinnamon vanilla maple syrup and a sprinkle of toasted coconut. This recipe is easily doubled and so on for as many additional plantains as you like. (Thank you to our friend Stacey Swanson for creating this wonderful recipe.)

  1. Spray a skillet with non-stick spray and melt your butter.
  2. Combine. maple sugar, cinnamon and salt in a shallow bowl.
  3. Toss plantain sliced into the sugar/cinnamon mixture.
  4. Fry about 2 minutes on each side until they reach a caramelized light to medium brown color. Be very careful because it takes seconds from these to go from caramelized to burnt.
  5. Spoon over vanilla ice cream and drizzle with maple syrup and a sprinkle of toasted coconut.
