In your mind I know you are thinking “Peanut butter coffee? Really?." But what is not to love? Doma Chronic Super Dank Coffee.....check. Eliot’s Nut Butters Espresso Nib Peanut Butter....double check. Frontier Co-op Applewood Smoked Salt to tie it all together....triple check. Vegan by pure accident is a quadruple bug bonus. It’s delicious, it’s creamy dreamy and makes its own foamy top that holds its own. The ingredients are clean and this isn’t going to put you in a sugar coma, you adjust the sweetness level. Get in my belly! (Thank you to our friend Stacey Swanson for creating this wonderful recipe.)
Ingredients
-
1 cup brewed strong Doma Coffee (hot)
1/2 cup of Barista style oat milk (hot)
1 heaping tablespoon of Eliot’s espresso nib peanut butter
1 tablespoon or to taste of Frontier Co-op maple powdered sugar (more for sprinkling)
1/4 teaspoon of Simply Organic cinnamon (more for sprinkling)
1/4 teaspoon of Frontier Co-op organic vanilla extract
A pinch of Frontier Co-op applewood smoked salt (more for sprinkling)
Directions
- Make sure your liquids are hot (or you can choose to heat the drink in the microwave once it is mixed). Place everything in a blender and blend about 60-90 seconds or so on high until everything is mixed well and the mixture has a foam. (please make sure you check the lid is on tight etc., especially when blending with hot liquid).
- Pour into your favorite mug and sprinkle a tiny bit more cinnamon, maple powdered sugar and smoked salt on top. Using a barista style oat milk and mixing in the blender creates its own nice sturdy foam that will lay right on top of the drink. If the drink cooled off while blending you can pop your mug in the microwave for a quick heat.
