Bacon Lettuce Tomato Sandwich with Herbed Avocado Mayo

The sandwich itself might not be an American invention, but you can find a BLT in just about any diner across the United States. We have given this beloved American staple a makeover with toasted seed bread, roasted bacon, tomato relish, butter lettuce and an herbed avocado mayonnaise. It’s not your average diner’s BLT. Ingredients

  • 8 pieces of your favorite seedy bread
  • 1 pound of good quality thick cut bacon that you have roasted in the oven at 375 degrees for about 25 minutes or until done
  • 1 package of multicolored baby tomatoes (yellow/orange/red)
  • 1 package of butter lettuce
  • 1 medium ripe avocado
  • 1-2 tablespoons of your favorite mayonnaise
  • Squeeze the juice from 1/2 of fresh lemon
  • 1.5 teaspoons or more to taste of Frontier Co-op Herb Fest or Garden Harvest seasoning
  • Pinch of Frontier Co-op fine salt

Directions

  1. Mash the avocado & mayonnaise together. Add in the squeeze of lemon, pinch of salt and seasoning to taste and set to the side.
  2. Dice up the baby tomatoes to make a tomato relish.
  3. Toast your bread.
  4. Simple assembly: Slather your toast with some of that herby avocado mayo, layer on some tomato relish, butter lettuce, and then bacon.
