French Tarragon Vinaigrette

There is nothing more French than a simple green salad tossed with vinaigrette. This vinaigrette will last in the fridge all week using dried Frontier Co-op French style tarragon vs fresh herbs that will start to wither, turn brown and break down. Make a double batch to dress side salads all week, dip steamed artichoke leaves, drizzle over warm french style green beans or make a salad Nicoise. Ingredients
- 1 small shallot minced
- 1-2 tablespoons of dijon mustard
- 1/4 cup of Sutter Buttes lemon balsamic vinegar
- 3/4 cup of extra virgin olive oil
- 1-2 teaspoons of honey or agave to taste ( I find that the lemon balsamic vinegar already lends a sweetness and so I typically don’t add sweetener to mine, so adjust to taste. If you decide to use a different vinegar and add some lemon juice you will probably want a little sweetness)
- 1.5 teaspoons of Frontier Co-op French Tarragon
- 1/2 teaspoon of Frontier Co-op Fleur de Sel
- 1/4 teaspoon of Frontier Co-op freshly ground organic Ceylon White Peppercorns
Directions
- Mix all ingredients in a bowl and then adjust for taste.
- Make a simple side salad with the freshest greens you can find. Toss in any extra fresh herbs you might have on hand. Toast a handful of walnuts or add sunflower seeds for crunch.
