Grown-Up Breakfast for Dinner Avocado Toast
Who doesn’t love breakfast for dinner? This jazzed up avocado toast is fit for a meal any day of the week. Lots of flavor packed accoutrements may even make this dinner party worthy. We are classing it up with the addition of Simply Organic guacamole mix, spicy arugula, Sutter Butte’s lemon olive oil, sunny side up organic free range eggs (or dippy eggs if you are from PA), Parmigiano-Reggiano, sunflower seeds, Mike’s hot honey, and balsamic glaze and a sprinkling of bacon bits. Ingredients
- 4 large pieces of hearty bread of choice, toasted (sourdough or a seed bread works great)
- 4 large organic free range eggs
- 2 medium-large avocados (ripe)
- 5 oz container of organic baby arugula
- packet of Simply Organic guacamole mix
- Sutter Buttes lemon olive oil
- small lemon
- bacon bits
- parmigiano-reggiano, shaved or grated
- sunflower seeds
- Mike’s hot honey
- balsamic glaze
- Frontier Co-op salt & pepper
Directions
- Cube or mash both avocados with 1/2 packet of Simply Organic guacamole mix, cover and chill about 30 minutes. *Save the other half of the packet for another night or if you are doubling the recipe for more people then use it.
- Take 1/2 of package of arugula and toss it in a bowl with a drizzle of Sutter Buttes lemon olive oil and a squeeze of 1/2 of the small lemon, Frontier salt & pepper to taste.
- Toast your bread to desired toastiness level in your toaster, while frying your eggs sunny side up. Make sure to grease your pan well. You are welcome to use poached eggs or scrambled eggs will work great, but there is nothing like breaking into that yolk and having it run all over the salad, avocado & toast.
- You are simply assembling 4 towers of yumminess now:
- toast
- guacamole
- arugula salad
- eggs
- parmesan
- sunflower seeds
- drizzle of hot honey
- drizzle of balsamic glaze
- sprinkling of uncured bacon bits
- salt & pepper to taste
- Dig in
