Instant Pot Fruit & Nut Yellow Mediterranean Rice

Yellow rice can be found among many cultures. It gets its yellow hue from a variety of spices such as turmeric, annatto seed or saffron. Some cultures make this a savory dish and some quite sweet. This particular recipe is the best of both worlds. There is a hint of sweetness from the dried fruit and the Frontier Co-op sweet turmeric twist blend but no added sweetener as in some recipes. The warm spices in the turmeric blend also lend a savory aspect. This recipe will work well with either Frontier Co-op turmeric twist spice blend sweet or savory. I made this particular recipe in the instant pot but you can easily make this on the stove top by following the directions on your package of basmati rice.   1. Spray your instant pot insert with nonstick spray.
  2. Rinse and drain your rice
  3. Place the oil in your instant pot insert along with the water, rice, garlic & turmeric twist blend, and salt
  4. Give it all a good stir and set your instant pot on high pressure for 4 minutes. Once the instant pot beeps after cooking you will want to do a natural 10 minute release so set your timer. After 10 minutes turn off the warmer and release the valve to make sure all the steam is out. Stir in your nuts & fruits and stop with extra for garnish and a few grinds of freshly ground pink peppercorns.
  5. *If you are making the rice on the stove top, add all ingredients but nuts & fruits to your pot and cook according to package directions for basmati rice. Once rice is done, stir in the nuts & fruits.
