Ingredients

Directions

  1. You’ll need a 400 degree oven and 2 cookie sheets lined with parchment paper.
  2. Cream together your cold butter, brown sugar and granulated sugar for 2-4 minutes. You want this mixture creamy.
  3. Add 1/2 of the flax egg mixture and mix well, then add the other 1/2. If you are new to vegan baking, you will see these flax “eggs” mix up nice & fluffy just like a traditional egg would.
  4. Stir in the dry ingredients until just combined. Add in your chocolate, cherries, almonds, granola, again, until just combined. Do not over mix.
  5. So you will get anywhere from 8-10 cookies depending on how heavy your hand is at scooping. Scoop a heaping 1/2 cup of dough and plop it on your cookie sheet.  Anywhere from 4-5 cookies on each sheet. These will not spread much. They are a hearty cookie that may end up as big as your fist.
  6. Bake anywhere from 9-12 minutes. Just slightly starting to brown on the top. You will need to let these rest a good 15 min or so on the cookie sheet and then you can move them to a rack carefully.

2. Vegan Maple Pecan Snowball Cookies

Do you love snowball cookies, with their delicate powdered sugar topping and light flavor? Vegan maple pecan snowball cookies are the perfect way to round off your cookie tray while sticking to your vegan diet. With their light, melt-in-your-mouth texture and a light crunch and salty note from the pecans, these cookies are sure to be a hit. Ingredients

Directions

  1. Preheat oven to 400 degrees. Line a baking sheet with Beyond Gourmet parchment paper.
  2. Combine flour, pecans and salt in a bowl and set aside.
  3. Beat butter, vanilla, and maple powdered sugar with a mixer until creamy.
  4. Turn the mixer to the lowest setting and add the flour.
  5. Scoop balls with a round tablespoon and gently roll and form into a ball. Use a light touch as this dough is delicate and can crumble. Since these do not spread you can bake them close together and depending on the size of your cookie sheet you may be able to fit all 24 on at once.
  6. Bake for 8-10 minutes or until the bottom edges of the cookies are lightly brown.
  7. Cool for a few minutes. While cookies are still warm, roll in the traditional powdered sugar to make them look like a snowball. Place on a rack to cool and then re-roll the cookies again once or twice in more powder sugar.
  8. The maple flavor is subtle but really lends a nice background flavor as opposed to the traditional snowball cookies. The flavor of these cookies meld the longer they sit and you may find the maple intensifies even more the next day or day two.

Ingredients

For the double orange glaze, you'll need:

Directions

  1. Preheat the oven to 375 degrees. Line 3 baking sheets with Beyond Gourmet parchment paper
  2. Cream the softened vegan butter and light brown sugar with your mixer. Add in the flax egg and beat until smooth. Add in the molasses and mix until combined.
  3. Sift or whisk in a bowl the bread flour, baking soda, cinnamon, ginger, five spice powder & salt. Once combined add to the butter/sugar/molasses mixture. Stir until just combined, not over mixing.
  4. Cover the dough and refrigerate for at least 15 minutes.
  5. Scoop roughly 1.5 tablespoons of cookie dough and roll that into a ball. Place the ball in a bowl of granulated sugar and roll the ball of dough until coated. Place on a baking sheet about 2 inches apart.
  6. Bake for roughly 8-10 minutes. Let cool on the pan for a few minutes before moving to a cooling rack.

Double Orange Glaze:

  1. Wash your orange with the Rebel Green fruit & veggie wash before zesting & juicing.
  2. Add 1.5 cups of powdered sugar into a bowl. Start by adding 1/4 teaspoon of Frontier or Simply Organic vanilla, then some zest and some juice and whisk, whisk, whisk to combine. Keep adding zest & juice until you get to the consistency & flavor you like. Don’t be afraid to taste your glaze. Some people like a heavy orange flavor and others just want a hint of orange in the background. Be your own guru and adjust this glaze to your taste buds. Once you get to the taste & consistency you like, drizzle it over the cookies and then sprinkle with some fresh pomegranate seeds if you like.

*It is perfectly acceptable to not even glaze these cookies. The flavor is good enough to stand on its own.
